A light and refreshing cucumber salad sandwich, perfect for picnics, brunch, or party appetizers.

Ingredients

Scale
  • 1 cup cream cheese (softened)
  • 2 tablespoons mayonnaise
  • 1 teaspoon fresh dill (chopped)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1 cup cucumber (thinly sliced)
  • 8 slices of bread (white, whole grain, or your favorite type)
  • Salt and pepper to taste

Instructions

  1. Combine the softened cream cheese and mayonnaise in a mixing bowl.
  2. Add the chopped dill, lemon juice, garlic powder, and season with salt and pepper.
  3. Spread the creamy filling evenly over one side of each slice of bread.
  4. Layer the thin cucumber slices on top of the spread.
  5. Place another slice of bread on top to create a sandwich.
  6. Cut the sandwiches into quarters or triangles for serving.

Notes

Make the filling a few hours ahead for enhanced flavors. Use a serrated knife for cleaner cucumber slices.
