Description

Indulge in these soft and chewy churro cookies that combine the warm flavors of cinnamon and butter, reminiscent of festive churros.


Ingredients

  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1 tbsp brown sugar (save until the end)
  • 2 sticks butter (softened)
  • 1 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla flavoring
  • 1/4 tsp lemon juice
  • 2 & 3/4 cups all-purpose flour
  • 1 tbsp corn starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 & 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1 stick butter (for frosting)
  • 1 & 1/2 cups powdered sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 2 tsp vanilla flavoring (for frosting)
  • 23 tbsp heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper; set aside.
  2. Mix together the 1/4 cup granulated sugar and 1/2 tsp cinnamon in a medium-sized bowl, then set aside.
  3. Cream the softened butter, 1 cup brown sugar, and 1/4 cup granulated sugar together in a large mixing bowl until light and creamy.
  4. Add in the egg, egg yolk, lemon juice, and 2 tsp vanilla flavoring; mix until all ingredients are well combined.
  5. Stir in the flour, corn starch, baking powder, baking soda, salt, and 1 & 1/4 tsp cinnamon, mixing just until the dry ingredients disappear.
  6. Scoop out 12 equally sized cookie dough balls using a large cookie scooper. Roll them between the palms of your hands, then roll them in the cinnamon sugar mixture. Save any leftover cinnamon sugar for later!
  7. Place the cookies on the prepared baking sheet, leaving 1.5-2 inches between each cookie. Gently flatten the cookies to about 2 cm in thickness.
  8. Bake in the preheated oven for 10 minutes. The cookies should be slightly golden on the edges but still soft in the center.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool fully.
  10. Prepare the churro buttercream while the cookies are cooling.

Notes

Add creative variations like chocolate drizzle or nuts, and consider making the dough ahead of time for convenience.
