Description
Indulge in these soft and chewy churro cookies that combine the warm flavors of cinnamon and butter, reminiscent of festive churros.

- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
- 1 tbsp brown sugar (save until the end)
- 2 sticks butter (softened)
- 1 cup brown sugar (packed)
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla flavoring
- 1/4 tsp lemon juice
- 2 & 3/4 cups all-purpose flour
- 1 tbsp corn starch
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 & 1/4 tsp cinnamon
- 1/4 tsp salt
- 1 stick butter (for frosting)
- 1 & 1/2 cups powdered sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 2 tsp vanilla flavoring (for frosting)
- 2–3 tbsp heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper; set aside.
- Mix together the 1/4 cup granulated sugar and 1/2 tsp cinnamon in a medium-sized bowl, then set aside.
- Cream the softened butter, 1 cup brown sugar, and 1/4 cup granulated sugar together in a large mixing bowl until light and creamy.
- Add in the egg, egg yolk, lemon juice, and 2 tsp vanilla flavoring; mix until all ingredients are well combined.
- Stir in the flour, corn starch, baking powder, baking soda, salt, and 1 & 1/4 tsp cinnamon, mixing just until the dry ingredients disappear.
- Scoop out 12 equally sized cookie dough balls using a large cookie scooper. Roll them between the palms of your hands, then roll them in the cinnamon sugar mixture. Save any leftover cinnamon sugar for later!
- Place the cookies on the prepared baking sheet, leaving 1.5-2 inches between each cookie. Gently flatten the cookies to about 2 cm in thickness.
- Bake in the preheated oven for 10 minutes. The cookies should be slightly golden on the edges but still soft in the center.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool fully.
- Prepare the churro buttercream while the cookies are cooling.
Notes
Add creative variations like chocolate drizzle or nuts, and consider making the dough ahead of time for convenience.
