Ingredients

  • 3 potatoes

  • 2 cups chicken broth

  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a skillet over medium heat. Season the chicken thighs with salt and black pepper, then sear them on both sides until golden brown.
  2. Place the seared chicken in the crockpot, laying them at the bottom.
  3. Chop the carrots, potatoes, and onion into bite-sized pieces, then mince the garlic. Add them around the chicken in the crockpot.
  4. Pour the chicken broth over everything, ensuring the veggies are just covered. Sprinkle dried thyme on top.
  5. Cover the crockpot and set it to cook on low for 6-8 hours.
