Description

Crispy Garlic Parmesan Smashed Potatoes are a delightful side dish that combines crispy edges, tender potato insides, and savory garlic topped with parmesan.


Ingredients

  • 1.5 lbs baby potatoes (Yukon gold or red)
  • 23 tbsp olive oil
  • 2 tbsp unsalted butter, melted (optional)
  • 3 cloves garlic, minced
  • 1/3 cup freshly grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (rosemary, thyme, parsley, or Italian blend)
  • Optional garnish: chopped fresh parsley, extra parmesan

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.
  3. Place the boiled potatoes on a baking sheet and gently smash each one with a fork or a potato masher, taking care not to break them apart completely.
  4. Drizzle the smashed potatoes generously with olive oil and melted butter (if using).
  5. Sprinkle the minced garlic, parmesan cheese, salt, pepper, and dried herbs evenly over the potatoes.
  6. Bake in the preheated oven for 20-25 minutes or until golden and crispy.
  7. Garnish with chopped fresh parsley and extra parmesan if desired. Serve hot and enjoy!

Notes

Make-ahead by boiling the potatoes a day in advance. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
