Crispy Garlic Parmesan Smashed Potatoes are a delightful side dish that combines crispy edges, tender potato insides, and savory garlic topped with parmesan.

- 1.5 lbs baby potatoes (Yukon gold or red)
- 2–3 tbsp olive oil
- 2 tbsp unsalted butter, melted (optional)
- 3 cloves garlic, minced
- 1/3 cup freshly grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried herbs (rosemary, thyme, parsley, or Italian blend)
- Optional garnish: chopped fresh parsley, extra parmesan
Instructions
- Preheat your oven to 425°F (220°C).
- Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.
- Place the boiled potatoes on a baking sheet and gently smash each one with a fork or a potato masher, taking care not to break them apart completely.
- Drizzle the smashed potatoes generously with olive oil and melted butter (if using).
- Sprinkle the minced garlic, parmesan cheese, salt, pepper, and dried herbs evenly over the potatoes.
- Bake in the preheated oven for 20-25 minutes or until golden and crispy.
- Garnish with chopped fresh parsley and extra parmesan if desired. Serve hot and enjoy!
Notes
Make-ahead by boiling the potatoes a day in advance. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
