Description

A comforting and creamy one-pot dish featuring tender chicken, caramelized onions, and gooey cheese, perfect for weeknight dinners.


Ingredients

  • 2 cups cooked rice
  • 23 chicken breasts (boneless, skinless)
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (Gruyère or Swiss)
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper, to taste

Instructions

  1. In a large skillet or pot, heat the olive oil over medium heat.
  2. Add the sliced onion and cook until caramelized, about 10-15 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the chicken breasts, season with salt, pepper, and thyme, and sear on both sides until golden brown.
  5. Pour in the chicken broth and bring to a simmer.
  6. Reduce heat to low, cover, and cook for about 15-20 minutes until chicken is cooked through.
  7. Remove the chicken and shred it into bite-sized pieces.
  8. Stir the sour cream and cooked rice into the skillet with the onion mixture.
  9. Add shredded chicken back in and mix well.
  10. Sprinkle with cheese and cover until melted.
  11. Serve warm and enjoy.

Notes

This dish can be made ahead and stored; use rotisserie chicken for a quicker option.
