  • 2 cups bowtie pasta (cooked according to package instructions)
  • 1 pound chicken breast, cubed (boneless, skinless)
  • 2 cups broccoli florets (fresh or frozen)
  • 1/2 cup unsalted butter (melted)
  • 2 cloves garlic, minced
  • 1 unit lemon, juiced and zested
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Begin by preparing the bowtie pasta according to the package instructions. Once cooked, drain and set aside, but reserve about half a cup of pasta water.
  2. While the pasta cooks, heat a large skillet over medium heat. Add the melted butter and allow it to bubble slightly.
  3. Toss in the minced garlic and sauté for about a minute, being careful not to burn it.
  4. Add the cubed chicken breast to the skillet. Season generously with salt, pepper, and paprika. Cook for 6-8 minutes until browned and fully cooked.
  5. Once the chicken is golden, add the broccoli florets to the skillet. Cook for an additional 3-5 minutes.
  6. Squeeze the fresh lemon juice over the chicken and broccoli, then add the lemon zest.
  7. Add in the cooked bowtie pasta along with a splash of reserved pasta water to create a sauce. Toss to combine.
