- 2 cups cottage cheese
- 1 cup shredded cheese (like cheddar or mozzarella)
- 1 cup chopped spinach
- 1/2 cup bell pepper, chopped
- 1/2 cup onion, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, whisk the eggs until light and frothy, then stir in the cottage cheese.
- Add chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and pepper to the egg mixture; stir to combine.
- Gently fold in the shredded cheese.
- Pour the mixture into a greased 9×9 inch baking dish.
- Bake for 40-45 minutes, until the center is set and golden on top.
Notes
Make ahead by preparing the mixture in advance and storing in the fridge. Substitute cottage cheese with plain Greek yogurt if desired.
