Description

A delightful mash of potatoes mixed with cabbage and crispy turkey bacon, offering comfort and warmth in every bite.


Ingredients

Scale
  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1 cup cabbage, chopped
  • 4 slices turkey bacon, cooked and crumbled
  • 1 leek, chopped
  • 3 scallions, sliced
  • Salt and pepper to taste
  • Milk (optional, for creaminess)

Instructions

  1. Boil the potatoes in salted water until tender, then drain.
  2. In a skillet, melt 2 tablespoons of butter over medium heat and sauté the cabbage until soft.
  3. In another pan, cook the turkey bacon until crispy, then set aside to cool.
  4. In a large bowl, mash the potatoes with the remaining butter and milk (if using) until smooth and creamy.
  5. Stir in the sautéed cabbage, crispy turkey bacon, leeks, and scallions.
  6. Season with salt and pepper to taste and serve warm.

Notes

Make-ahead by preparing the mashed potatoes in advance. Use starchy potatoes like Russets or Yukon Golds for the best texture.
