- 2 pounds potatoes, peeled and cubed
- 4 tablespoons butter
- 1 cup cabbage, chopped
- 4 slices turkey bacon, cooked and crumbled
- 1 leek, chopped
- 3 scallions, sliced

- Milk (optional, for creaminess)
Instructions
- Boil the potatoes in salted water until tender, then drain.
- In a skillet, melt 2 tablespoons of butter over medium heat and sauté the cabbage until soft.
- In another pan, cook the turkey bacon until crispy, then set aside to cool.
- In a large bowl, mash the potatoes with the remaining butter and milk (if using) until smooth and creamy.
- Stir in the sautéed cabbage, crispy turkey bacon, leeks, and scallions.
- Season with salt and pepper to taste and serve warm.
Notes
Make-ahead by preparing the mashed potatoes in advance. Use starchy potatoes like Russets or Yukon Golds for the best texture.
