Ingredients

- 1 1/4 cups all-purpose flour
- 1/2 cup room temperature butter (1 stick)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 cup sweetened coconut flakes
- 1 cup old-fashioned oats
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Instructions
- Preheat the oven to 350°F.
- Cream the butter, white sugar, and brown sugar until fluffy and light.
- Add in the vanilla extract and egg, stirring until combined.
- Sift in the salt, flour, baking powder, and baking soda, mixing until just blended.
- Fold in the oats and coconut flakes until the dough is crumbly and thick.
- Spoon about 1 1/2 tablespoons of dough onto a greased baking sheet, forming balls.
- Bake for 15 minutes until golden and fragrant.
- Allow to cool for 3 minutes on the baking sheet, then serve warm!
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze for up to 3 months. Dough can be prepared in advance and refrigerated for up to 24 hours.
