Description

Delightful Coconut Oatmeal Cookies filled with sweetened coconut and wholesome oats, perfect for cozy gatherings.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup room temperature butter (1 stick)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup sweetened coconut flakes
  • 1 cup old-fashioned oats
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter, white sugar, and brown sugar until fluffy and light.
  3. Add in the vanilla extract and egg, stirring until combined.
  4. Sift in the salt, flour, baking powder, and baking soda, mixing until just blended.
  5. Fold in the oats and coconut flakes until the dough is crumbly and thick.
  6. Spoon about 1 1/2 tablespoons of dough onto a greased baking sheet, forming balls.
  7. Bake for 15 minutes until golden and fragrant.
  8. Allow to cool for 3 minutes on the baking sheet, then serve warm!

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to 3 months. Dough can be prepared in advance and refrigerated for up to 24 hours.
