Description

Delightful no-bake Classic Cucumber Sandwiches with creamy filling and refreshing cucumber layers, perfect for afternoon tea or gatherings.


Ingredients

  • ¾ cup cream cheese (whipped)
  • ¼ cup sour cream (or mayonnaise)
  • 2 tablespoons dill (finely chopped)
  • Kosher salt (to taste)
  • ½ English cucumber (thinly sliced)
  • 8 slices sandwich bread (crusts removed)

Instructions

  1. Mix the cream cheese, sour cream (or mayo), chopped dill, and a pinch of kosher salt in a bowl until smooth.
  2. Spread the mixture generously over one side of each slice of bread.
  3. Layer the cucumber slices on half of the bread, slightly overlapping them.
  4. Place the other slices of bread on top, spread side down, and gently press to close the sandwiches.
  5. Trim the crusts with a serrated knife and cut each sandwich into four small pieces.
  6. Arrange the sandwiches on a serving dish and garnish with dill or extra cucumber slices if desired.

Notes

These sandwiches can be made a few hours ahead. Store covered to keep fresh. Use fresh bread for best texture.
