Ingredients

- 1 can chickpeas, drained and rinsed
- 2 tablespoons mayonnaise or vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup diced celery
- 1/4 cup diced red onion
- Salt and pepper to taste
- Bread or sandwich wraps for serving
Instructions
- Mash the chickpeas with a fork until flaky but still chunky.
- Add the mayonnaise, Dijon mustard, lemon juice, diced celery, diced red onion, salt, and pepper.
- Mix well, letting all those wonderful flavors come together.
- Taste and adjust seasoning if necessary.
- Serve on your favorite bread or wraps, piled high.
Notes
This salad gets even better after a few hours in the refrigerator. Store leftovers in an airtight container in the fridge for up to 3 days.
