- 2 medium tomatoes, sliced
- 1 cup mozzarella cheese, shredded
- 1/4 cup pesto sauce
- 2 tablespoons balsamic glaze
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- Heat some olive oil in a skillet over medium heat, letting it shimmer just slightly.
- Season the chicken breasts generously with salt and pepper, then add them to the skillet. Sear until golden brown and cooked through, about 6-7 minutes on each side.
- Remove the chicken from the skillet and set aside, allowing the juices to rest.
- Layer slices of tomato right on top of the chicken.
- Drizzle the pesto sauce and balsamic glaze over the tomatoes.
- Sprinkle shredded mozzarella cheese on top.
- Cover the skillet and let it cook for an additional 5 minutes, or until the cheese is melted and bubbly.
