Description

A warm, creamy Chicken Caprese Skillet featuring tender chicken, ripe tomatoes, and gooey melted mozzarella, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 2 medium tomatoes, sliced
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup pesto sauce
  • 2 tablespoons balsamic glaze
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Heat some olive oil in a skillet over medium heat, letting it shimmer just slightly.
  2. Season the chicken breasts generously with salt and pepper, then add them to the skillet. Sear until golden brown and cooked through, about 6-7 minutes on each side.
  3. Remove the chicken from the skillet and set aside, allowing the juices to rest.
  4. Layer slices of tomato right on top of the chicken.
  5. Drizzle the pesto sauce and balsamic glaze over the tomatoes.
  6. Sprinkle shredded mozzarella cheese on top.
  7. Cover the skillet and let it cook for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!

Notes

For variations, add spinach, mix cream into pesto, or use Italian sausage instead of chicken.
