Description

Delightful muffins filled with sweet cherries and topped with a crunchy streusel, perfect for breakfast or a cozy snack.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup butter, softened
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine 1 cup of flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together milk, melted butter, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the cherries gently.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Mix brown sugar, 1/4 cup flour, softened butter, and cinnamon to create the streusel topping.
  8. Sprinkle the streusel evenly over the batter in each muffin cup.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Allow to cool for a few minutes before serving.

Notes

For a zesty twist, add lemon or lime zest. Substitute cherries with other berries or stone fruits as desired.
