Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion, bell pepper, and minced garlic; sauté until softened and fragrant, about 3-4 minutes.
  3. Stir in the shrimp and cook until they turn a lovely pink, about 2-3 minutes.
  4. Sprinkle in the long-grain rice and Cajun seasoning, stirring well.
  5. Pour in the chicken broth, bring it to a gentle boil.
  6. Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Season with salt and pepper to taste. Garnish with chopped green onions before serving.

Notes

For a creamy twist, add a splash of heavy cream or coconut milk before serving. Feel free to customize with your favorite vegetables.
