- 1 cup long-grain rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons Cajun seasoning

- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion, bell pepper, and minced garlic; sauté until softened and fragrant, about 3-4 minutes.
- Stir in the shrimp and cook until they turn a lovely pink, about 2-3 minutes.
- Sprinkle in the long-grain rice and Cajun seasoning, stirring well.
- Pour in the chicken broth, bring it to a gentle boil.
- Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Season with salt and pepper to taste. Garnish with chopped green onions before serving.
Notes
