- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 cup fresh or freeze-dried blueberries
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese and butter together until creamy.
- Gradually add the powdered sugar, mixing until smooth and velvety.
- If using, blend in the lemon juice and vanilla extract.
- If using fresh blueberries, mash them gently before adding to the mixture; if using freeze-dried, crush them into a fine powder.
- Mix in the blueberries until the frosting is evenly colored.
- Use immediately on cupcakes or layer cakes, or refrigerate until ready to use.
Notes
This frosting can be made a day ahead and stored in the fridge. It lasts about a week in an airtight container.
