Description

A hearty one-pan meal featuring tender chicken, crispy turkey bacon, and creamy cheddar cheese, perfect for busy weeknight dinners or weekend gatherings.


Ingredients

  • 2 lbs chicken breasts (cubed)
  • 1 lb turkey bacon
  • 4 cups Yukon gold potatoes (cubed)
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 23 tbsp ranch seasoning
  • 2 cups cheddar cheese (shredded)

Instructions

  1. Preheat your Blackstone to medium heat, adding a thin coat of oil to the surface.
  2. Add the diced Yukon gold potatoes to one side of the grill and cook for about 15 minutes, flipping them halfway through.
  3. Lay the turkey bacon on the other half of the grill and cook for about 5 minutes per side until crispy.
  4. Remove the bacon and set it aside, then flip the potatoes if needed.
  5. Add the cubed chicken to the grill, seasoning it and the potatoes with salt, paprika, garlic powder, onion powder, and ranch seasoning.
  6. Cook the chicken for about 6-8 minutes on each side until it’s no longer pink inside.
  7. Combine the chicken and potatoes in a skillet, layer with cheddar cheese and bacon, and cook until the cheese is melted.
  8. Remove from the grill and let cool briefly before serving.

Notes

Prep ahead by cubing chicken and potatoes the night before. Store leftovers in an airtight container for up to 3 days.
