- 10 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup Italian dressing
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Once done, drain and set aside to cool, allowing the tortellini to become tender and fluffy.
- In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, black olives, bell pepper, and red onion.
- Pour the Italian dressing over the salad. Toss everything gently to combine.
- Sprinkle with Parmesan cheese, and season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
