Description

A vibrant and creamy summer salad that combines cheese tortellini, fresh vegetables, and zesty Italian dressing, perfect for potlucks and picnics.


Ingredients

  • 10 ounces cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup Italian dressing
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions. Once done, drain and set aside to cool, allowing the tortellini to become tender and fluffy.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, black olives, bell pepper, and red onion.
  3. Pour the Italian dressing over the salad. Toss everything gently to combine.
  4. Sprinkle with Parmesan cheese, and season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.
