- 3–4 ripe bananas (about 2 cups mashed)
- 1/3 cup salted butter (melted)
- 3/4 cup (150g) granulated sugar
- 1 large egg (beaten)
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 1/2 cups (212g) all-purpose flour
- 1 cup chopped walnuts (or chocolate chips, plus extra for topping if desired)
Instructions
- Preheat your oven to 350℉ (177℃). Lightly grease and flour an 8.5×4.5-inch loaf pan or use baking spray for easy release.
- Combine the mashed bananas with the melted butter in a large bowl.
- Add the sugar, beaten egg, and pure vanilla extract; stir well with a large wooden spoon.
- Sprinkle the baking soda, baking powder, ground cinnamon, and salt over the mixture and stir gently to combine.
- Add the all-purpose flour and fold in the chopped walnuts or chocolate chips. Stir until just combined.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until a knife inserted in the center comes out clean.
- Cool the loaf in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice into 10 thick pieces, and enjoy!
Notes
Ripe bananas are key for sweetness. You can prepare the batter a day in advance and keep it covered in the refrigerator. Use a serrated knife for slicing.
