- 4 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup chopped red onion
- 1/2 cup sunflower seeds (unsalted)
- 1 cup cooked turkey bacon, crumbled
- 1/2 cup mayonnaise (or Greek yogurt)
- 2 tablespoons apple cider vinegar
- 2 tablespoons sweetener of choice (Stevia or Erythritol)
- Salt and pepper to taste
Instructions
- Wash the fresh broccoli florets under cold water. Pat them dry and chop into bite-sized pieces.
- Combine the broccoli florets, shredded cheddar cheese, chopped red onion, sunflower seeds, and crumbled turkey bacon in a large mixing bowl.
- Whisk together the mayonnaise, apple cider vinegar, and sweetener in a separate small bowl. Season with salt and pepper.
- Pour the dressing over the salad mixture and gently toss until each piece is coated.
- Cover the bowl and let it chill in the refrigerator for at least 30 minutes.
