- 1 lb ground turkey
- 2 cups cooked jasmine rice
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 cup chopped red bell pepper
- 1 cup chopped carrots
- 1 cup chopped broccoli
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Cook jasmine rice according to package instructions.
- In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the bang bang sauce. Set aside.
- Heat a large skillet over medium-high heat and add olive oil.
- Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
- Once turkey is cooked through, add soy sauce, salt, and pepper, stirring well.
- Add chopped red bell pepper, carrots, and broccoli, cooking for another 5-7 minutes until vegetables are tender-crisp.
- Remove skillet from heat and mix in half of the bang bang sauce.
- To serve, place a mound of cooked jasmine rice into individual bowls and top with the turkey and vegetable mixture.
- Drizzle remaining bang bang sauce over each bowl and garnish with sliced green onions and sesame seeds.
- Serve immediately and enjoy!
Notes
Try variations with crispy tofu or zesty avocado for a delightful twist. The bang bang sauce can be made a week in advance for quick assembly.
